New College's pastry chef, Elycia Rayner, comes third in an international baking competition

New College's apprentice pastry chef, Elycia Rayner, was placed third in the 'Afternoon Tea' category in international baking competition, The Bake Shows, held at the NEC in Birmingham. 

This was Elycia's debut at the competition where just under 1000 entrants from 39 countries took part across a wide range of categories. Elycia was also awarded one of only two silver awards in her category and was placed third out of 30 entrants.

For the 'Afternoon Tea' competition, Elycia was required to make three different desserts. On her menu, she had:

  • Mini fresh fruit pavlova with pear gel and Chantilly cream;
  • Modern Black Forest cake; and
  • Religieuse choux pastry bears filled with burnt honey cream and lemon curd.

Following her win, Elycia said:

"To say I’m over the moon with this result is an understatement, especially as this was my first time entering. Many of the competitors had entered a couple years in a row and were professionals which makes this achievement mean even more to me as I'm still a student. I definitely can’t wait for what the future holds and I will never stop pushing to be the best I can be. I’ll be coming for that gold next year!"
